Raspberry Tiramisu

I absolutely love tiramisu, but after a big meal it can be too rich and heavy to properly enjoy. My version is still luscious, but it's lightened up with fresh raspberries and brightened with vanilla instead of coffee flavouring. This dessert takes less than 5 minutes to prepare and the results are as pretty to look at as they are yummy to eat. Plus, have you noticed, it's the perfect colour combination for Canada Day? There's no excuse for showing up to the bbq empty handed now!

Recipe {per person}: Mix together 1 heaping tbs low-fat ricotta, 1 heaping tbs low-fat Greek yoghurt,  1tsp caster sugar, 1/2 tsp vanilla extract • Place 1 -2 sponge fingers in a small bowl or glass • select a handful of fresh or frozen raspberries* • arrange layers of cookie, fruit, and ricotta mixture as you like • garnish with mint springs or orange zest!

*If you want a moister tiramisu and have a little extra prep time to play with, try poaching the raspberries in a little orange juice and sugar to create a syrup that will soak into the sponge fingers.
